Spring Update from Marée

Hi everyone,

We wanted to share a few updates as Marée continues to come to life in Spring Lake.

A major recent step for us has been bringing Mike Smithling on as Executive Chef. Mike was formerly the Executive Chef at The St. Laurent, and his commitment to quality, discipline, and thoughtful hospitality makes him an exciting addition to the team.

Construction is continuing across key areas of the restaurant, and we recently completed the demolition of the original vault. In the process, we uncovered a marble subfloor that appears to date back to the 1940s, which we plan to restore and incorporate into the space as a nod to the building’s history.

Marée has always been about creating something with character, substance, and a strong sense of place. It’s exciting to see more of those elements begin to emerge as the project takes shape.
